I got this recipe from a Paleo cooking app I got recently, and I've made these before and they're just divine! Easy to make ahead, easy to pack and take on a job, and delicious. Now, "healthy" may be an over exaggeration, but hey, we can pretend, can't we? ;) (The app is Paleo Plate, for those interested.)

I'll usually make these in the evening and store for the week ahead. SO. GOOD.

1. Preheat oven to 350. Grease muffin tin.

2. Beat together 1 1/2 cups smooth nut butter (recipe says cashew; I use almond) and 5 large eggs with electric mixer until smooth and fluffy (about 5 minutes). Beat in 2/3 cup maple syrup or honey2/3 cup unsweetened sifted cocoa powder, 1 tablespoon vanilla extract, 1 teaspoon kosher salt, and 1 teaspoon baking soda. Mixture should be smooth, thick, and glossy.

3. Divide into prepared muffin tin and bake 15-20 minutes or until puffed up and cracked on top. Test with toothpick; it should come out clean. Let cool for 5 minutes before eating.
