Anyone have any good vegan recipes for depo snacks?
I make these delicious roasted almonds.
Here's the recipe. It comes from the cookbook entitled: The Garden of Vegan
Spicy Maple Nuts
1/4 cup maple syrup
1/2 tsp salt (I use sea salt)
1/2 tsp cayenne pepper
1/2 tsp cinnamon
1 1/2 cup raw nuts (your choice: walnuts, pecans, almonds, et.) I love to use almonds
In a small bowl, stir the maple syrup, cayenne and cinnamon. In a large fry pan, (I use a wok) stir the nuts over medium-high heat for 2-5 minutes, or until they begin to look toasted. Stir in the maple syrup mixture and cook 15-30 seconds, or until liquid is evaporated. Remove from heat and let cool. Makes 2 cups.
This a super delicious recipe, especially in winter, that I use as a handy snack or I have even taken it to potlucks. It's quite the hit.

A great snack for me is unsalted or lightly salted pistachio nuts (nice large ones at Trader Joe) or unsalted sunflower seeds, the large Israeli ones that I buy in a Greek store. Lara or Luna bars are good, too. Dark chocolate-covered edamame, also TJ, if I dare to buy it, works great too as a snack or even lunch if in a pinch. They're very fattening so I try not to buy them. But when starved and no time, man, do they hit the spot. And they're filling.
That looks like a great recipe. Another great place to shop is the Whole Foods Store. Do you have one in your area? I have a great way to make cauliflour taste like pop corn. You just break 1 head of cauliflour up into crumbs, pour into a ziplock freezer bag. Add 1/2 cup of nutritional yeast, 1/2 tsp of sea salt and 1/2 tsp of garlic and shake it. Then you have raw pop corn.

I usually buy it in the bulk section at health stores or co-ops. It's very popular as a popcorn condiment. It is also low in sodium.
