I found this recipe about four years ago on the Silk Soymilk website. I usually make them and take them to Christmas parties and they are always a huge hit and super yummy. I hope you enjoy them.
INGREDIENTS
* Cocoa powder or finely grated chocolate (semisweet)
* 1⁄3 c Silk Coffee Creamer (any flavor)
* 1⁄2 lb Semisweet chocolate (melted, good quality )
* 2 T Orange liqueur or rum (optional)
PREPARATION
Combine the Silk for Coffee and liqueur or rum in a small saucepan, and bring to a simmer. Pour the hot Silk for Coffee into the melted chocolate, and whisk together. Transfer the mixture to a shallow dish or pan, and chill or freeze briefly until thickened and set.
Scoop 1-inch truffles using a small spoon or melon baller. Roll each truffle briefly between your hands to smooth out the shape. Place on a plate and refrigerate until firm. To finish, roll the chilled truffles in cocoa powder or grated chocolate.
