3/4 Cup butter
1 1/2 Cup brown sugar
2 Tb water
2 Cups chocolate chips
2 eggs
2 1/2 Cups Flour
1 1/4 ts. baking soda
1/2 ts. salt
Andes Mints
Soften butter and mix into brown sugar and water. Then add the two eggs and blend in. In a separate bowl, combine dry ingredients and add mixture into the brown sugar and butter mixture. Melt the chocolate chips and mix melted chocolate into the dough. Roll into balls and bake for 12 minutes @ 350 (unwrap the Andes Mints while the cookies are in the oven). Remove from oven and top the hot cookies with the Andes Mints, allowing the heat from the cookies to melt the mint. Spread the melted mint over cookies with the back side of a spoon or finger. Then let cool.
These cookies are awesome if you stick them in the freezer, they're great cold. Hope you like 'em! Merry Christmas!
