There is no parenthetical needed in the second answer to show that the interpreter resumed because after the interpreter and the witness were sworn, the following parenthetical is inserted:
(The following proceedings took place through the official interpreter.)
Alternatively, if it's going back & forth the whole time, then each answer could have a parenthetical (in English) or (through the interpreter). That would be easy as pie to do using a macro and it's a nice way to legitimately pad.
A. (In English) Answer.
THE INTERPRETER: "Answer."

Q. Question.

The Plaintiff attorney speaks to the witness in Spanish, then the interpreter translates it.
Here is what I put, but I could use some input:

(Ms. Plaintiff-Attorney spoke to the witness in Spanish.)
MS. PLAINTIFF-ATTORNEY: (Through interpreter) What side?
THE WITNESS: Left.
BY MR. DEFENSE-ATTORNEY:
Q. Question?
A. Answer.
(Ms. Plaintiff-Attorney spoke to the witness in Spanish.)
MS. PLAINTIFF-ATTORNEY: (Through interpreter) Are you sure?
THE WITNESS: Yes.
At which point, I hollered at her that she was making me crazy -- (yes, that's exactly what I said) -- and that she needed to go through the interpreter.
The last one I did, I did tell the attorneys, on the video record (after some English then Spanish, Spanish then English answers), that I would no longer be taking down anything the witness said in English, that the witness must speak in Spanish and it be interpreted. They paused. They followed instructions. I mean, really.
