These pancakes are a hit in my house. In fact, they're such a hit that I'm chained to the griddle every Sunday morning!
- 2 cups Whole Wheat Pastry Flour (or your all-purpose flour)
- 4 teaspoons baking powder
- Dash (maybe half tsp.) of salt
- 2 teaspoons of brown sugar (you can also use agave, just add a teeny bit more flour to balance the wet/dry consistency of the batter)
Mix dry ingredients together, then:
- Add 4 tablespoons of vegetable oil
- 1 and 1/2 cups of rice/soy milk
Mix the batter but don't overmix as you will end up with tough pancakes. All right. That's it! Get your griddle nice and hot and pour on the batter.
Happy pancakes! My five-year-old loves these. For even more fun you can pick up vegan chocolate chips at Whole Foods and add those to the pancakes while cooking.
