Not because of a seasoned ear, but because of being Chinese...

I know what it is. It is sometimes called Chinese barbeque pork. The Chinese make it into buns called "Cha Siu Bao" ("Bao" means bun) As there are differences in dialects (Cantonese vs Mandarin), there may be different pronunciations / spellings for it...

In Cantonese: Cha Siu
In Mandarin: Cha Shao
