Well, fall seems just around the corner so I thought I would post one of my favorite harvest recipes. This originally came from my roommate and I don't have exact measurements, but it would be pretty hard to mess it up.
I prefer the mash potato consistency, but it is a delicious soup as well.
Here goes:
One cooked butternut squash. (I have a ton in my garden)
2 or 3 large boiled potatoes like you were going to make mashed potatoes.
When the potatoes are done add the cooked squash with some veggie broth and coconut milk a little sea salt and some thyme.
I just taste is to see how much of that stuff I need.
Mash it and mix it together, keep it warm on the stove and there you have a hearty and warming dish.
Super easy, too.
